There is nothing like homemade stock. It imparts deep flavor and is extremely nutritious and I, for one, always feel virtuous putting all the leftover bones and vegetables to use.

But what about when you don’t have time for a stock? A good substitute is to add gelatin to commercial stock or soup.

Gelatin is processed from animal collagen, the bones, hoofs and skin. It in turn strengthens our own collagen, our skin and hair, our nails and joints. Virtually tasteless and odorless, gelatin can be bought in a granular form and can easily be added to stock, smoothies or even used to make a jello fruit mold!
