The Activators

 I have been promoting the foods and super foods that give us a high concentration of vitamins A and D. But why is that important?

Weston Price called these fat-soluble vitamins the Activators. They are the catalysts for mineral absorption.
In fact, he considered the lack of these vitamins the greatest break down in the modern diet. To quote him,

“It is possible to starve for minerals that are abundant in foods eaten because they cannot be utilized without an adequate quantity of the fat soluble activators. “

In other words, no amount of mineral supplements taken will help you without adequate amounts of vitamins A and D present.

Vitamins A and D have a synergistic relationship; the presence of Vit. D prevents Vitamin A from becoming toxic, even in high doses. These vitamins work together and are usually found in the same foods. These include, shellfish and oily fish, including fish eggs, heads and fat. From grass pasturized animals, butter, milk, organ meats and eggs.These foods help to strengthen our bones, our muscles, they give us healthy skin, they strengthen our immune system and our nervous system. They even promote longevity.

The fat soluble vitamins are foundational to our health!

A great dressing,  perfect over vegetables or salads.
In a 1-1-2 ratio

2 Tablespoons Lemon Juice
2 Tablespoons Shoyu (unpasteurized soy sauce available at Whole Foods)
4 Tablespoons Olive Oil

Whisk and use

Gelatin Trick

There is nothing like homemade stock. It imparts deep flavor and is extremely nutritious and I, for one, always feel virtuous putting all the leftover bones and vegetables to use.

But what about when you don’t have time for a stock? A good substitute is to add gelatin to commercial stock or soup.

Gelatin is processed from animal collagen, the bones, hoofs and skin. It in turn strengthens our own collagen, our skin and hair, our nails and joints. Virtually tasteless and odorless, gelatin can be bought in a granular form and can easily be added to stock, smoothies or even used to make a jello fruit mold!

Coconut Oil and Alzheimer's Disease

 I have written before about the health benefits of coconut oil but there is exciting new evidence that the use of this oil can minimize the effects of Alzheimer’s disease.

In Alzheimer’s the cells of the brain are unable to uptake glucose properly. In short, the brain itself is starving for nutrients.

The medium-chain fatty acids, which are found in coconut oil, are able to partially convert to ketones which the brain can upload and use as an alternative fuel.

This is helpful not just for Alzheimer’s but for other neuro-degenerative diseases as well, such as:

Sunshine and Vitamin D

What is the best way to get the Vitamin D we need when there’s no sun? We now know that you can produce vitamin D only when the sun is directly overhead, in the summer months. The rest of the time we need to be getting it in our food.

Thanks to the research of Dr. Weston Price we know that all traditional societies ate foods, often considered sacred foods, that were extremely high in Vitamins A and D, the fat soluble vitamins. In fact, traditional societies received roughly 10 times the amount of these vitamins as we receive in a modern diet. These foods include fish eggs, oily fish, like salmon or mackerel, and shellfish. Other sources of A and D are available from grass fed animals, liver and other organ meats, animal fat, eggs, butter and cream.

These densely nutritious foods are often things we have been warned against consuming. We’re told they are too rich or have too much cholesterol but in moderation, they are desperately needed.

Another great source of Vitamins A and D is cod liver oil. Wild vs. Farmed

If you aren’t aware of the new research on farmed salmon, this is important to know.

We know that farmed salmon isn’t as nutritious as wild caught, It’s penned, fed an inferior diet, given coloring and cheap vitamins but is it actually dangerous? Apparently, yes.
Due to recent research on the high level of contaminants, the Norwegian government is changing its recommendation for pregnant women to 2 meals per week and 4 major Norwegian supermarket chains are threatening to completely ban farmed salmon from their stores.

Wild salmon, on the other hand, is one of the healthiest foods you can eat! It is high in the long chain omega 3 fatty acids (EPA and DHA). It is high in the all important Vitamin D, and it contains Astaxanthin, a powerful antioxidant and anti-inflammatory. Of course, it’s also delicious!

The easiest way to know if you are buying wild or farmed salmon is to find out where it’s from. If its from Alaska it’s wild.

Alaskan salmon is pristine, responsibly fished, and never farmed. It is worth the extra money to buy wild, you will have the incredible health benefits, the flavor and you support real fishermen whose livelihoods have been threatened by all the cheap farmed fish on the market.

You can also buy canned salmon which is always wild, Alaskan fish.
